If you remember one pairing rule, make it this. Match the wine to the sauce, not the protein. Lemon butter wants crisp white wine. Tomato sauce wants juicy, high-acid red. Cream sauce wants something round but fresh. Spicy sauce needs a little sweetness or low alcohol. The sauce is what stays on your palate, so pair with that.
